Sweet & Salty Peanut Butter Rolo Thumbprint Cookies

Blah blah blah one more cookie recipe….go ahead and roll your eyes….skip around my post…fine, BUT these lovely cookies are actually rolled in crushed potato chips….Do I have your attention now?

Maybe I should have called them bad*ss cookies….but I am a lady and ladies don’t use the word “bad”…or is it “*ss”?  Who knows?  I just think that anything sweet and salty is bada.. well, you know the rest.

I am taking these cookies for our weekend trip to Appalachian State University! YAY us!  I will take lots of pictures and hopefully find a creative way to share our little weekend trip with you guys.  My food contribution: beef chili (enough to feed 20..!) a Banana Bread, a Cheesy Beer Bread,  a double batch of my mom’s Mexican Dip ,the famous Jezebel Brownies (slutty brownies),  and these lovely little cookies….my work here is done…time to party

Part of this recipe was adapted from: Spoon fork bacon: Peanut Butter & Jelly Thumbprint Cookies

Ingredients:

1/2 cup butter

1/2 cup sugar

1/2 cup light brown sugar

1 egg

1 teaspoon vanilla

1 1/2 cups flour

3/4 teaspoons baking soda

1/8 teaspoon salt

1 cup creamy peanut butter

1 egg, lightly beaten
2 to 3 cups potato chips, crushed

1 bag mini rolos (8-ounce)

How to:

Preheat your oven to 375 degrees F.  Line your baking sheet with parchment paper or silicone mat.  Set aside.

In a large bowl, combine your flour, baking soda and salt.  Set aside.

In your mixer, cream your butter with your sugars.  Add your egg and vanilla.  Add your dry ingredients at once and combine until just blended.  Add your peanut butter.  Blend well.  Using a small size scoop or tablespoon make round little balls with your dough, drop in your egg white and roll into your crushed potato chips.  Put on your prepared baking sheet and using a finger (any will work) make a small indentation (hence the thumbprint).  Bake in your preheated oven for 12-14  minutes.  Once out of your oven you may have to “re-print” your thumbprint (does that even make sense???  you get the idea).

Time for the Rolos.  Put a Rolo in the center of each cookie and put your baking sheet back in your hot oven for about 30 seconds to 1 minute.  Using the back of a spoon (or your fingers if you are a ninja or navy seal!) press  GENTLY down on your  “hot” Rolo to swish everything together!

Note: if you push down too hard on your Rolo the cookie will crush…yes I speak from experience!

Another Note: these cookies are somewhat crumbly.  You may need to wear your Superman/Superwoman Cape backwards to catch the crumbs
